I guess I like a younger vinegar with less acidity. My current go-to for vinaigrette is a 10 year old vinegar with 6% acidity. This particular vinegar is 8% and I find it too tart in a vinaigrette on my greens. Maybe I would appreciate it more in other applications like soup or marinade.
