We liked these just fine. They cook up rather like an Asian glass-noodle, although a bit thicker and more substantial, somewhat chewy. Not like pasta or egg noodles, but we still enjoyed them in chicken soup, and I think I'd enjoy them in Asian dishes or with sauces. too.

These are good, I added them to my diet as I am going AIP/Paleo. I love them as a replacement for noodles, they really are quite similar. I only have them about once a month however, I don't think they are very nutrient dense.

I was not sure what to expect as I have never eaten these before, but I was pleasantly surprised. They are almost like rice noodles when cooked, very translucent and almost glass-like. But once you sauté them with some sauces or oils they will take on the flavor nicely. I've eaten them with meat sauce, and also sautéed with bok Choy and chicken with olive oil. Also added them to chicken soup. They do not taste like sweet potatoes at all.
