Alcohol level kind of low.

I added sugar water to bring the alcohol level up before adding the yeast. I also added an oak spiral during the secondary fermentation. Just waiting for two or three months to bottle.

Did the 1 gallon, now will do the 5 gallon. Excellent even without any aging. Turns out very dry based on SG reading, so added 1 Tbls simple sugar, (moved SG .002).

I have just started making wine from kits. This is my 5th kit. I have tried kits from Winexpert, RJS and Master Vintner. I have yet to make home made wine from fruit (it is on my to-do list). This kit is wonderful! Easy to follow instructions for the beginner. The wine has had great reviews from Chardonnay lovers (I prefer sweet wines), even after only 2 weeks in the bottle. I polish my wine with a harris filter right before bottling.
I love the 1 gallon kits, but I am moving up the the 6 gallon kit for my next batch, pink moscato!
