I made Kefir. I used whole milk and a pid controlled slow cooker at 107 deg. f. The first batch i tried at 80 deg but after 24 hours it smelt like Kefir but was still the consistency of milk so over night at 107 deg it thickened up and separated mixed it up saved some in the freezer for the next go around. The next batch I sterilized the milk and added the frozen Kefir at about 110 deg. and let it go about 7 hours at 107 and had nice and creamy Kefir.. The seller sent me a lot of good info and getting ready to start my 3rd go around using starter from the 2nd batch still on the 1st packet of culture.

This powder makes perfect kefir, with the taste close to the one I remember from my childhood in Russia. But of course, some of the instructions on the packaging are insane. Do not boil the milk. Milk from stores comes pasteurized, so it contains relatively few bacteria. Throughout the process of fermentation and increasing acidity, the unwanted bacteria will be dying. I tried making kefir of both boiled and non-boiled milks, and can say that the "boiled" kefir tasted funny. Important to note that when you make kefir in two batches, the second batch has a better taste. When the second batch is ready, keep it in a fridge for at least a day or two to ripen. My favorite taste is emerging after day 3.

Being diabetic yogurt can be the best or worst of foods. We have an antomatic yogurt maker and began using this product several months ago, results were great. Somehow, by mistake, we ordered a similar looking product and did not get consistent or satisfactory results. Eventually, we used it all and went back to this brand. Bingo! We are back to thick creamy yogurt. We do use some powdered milk.
