This was incredibly easy to feed and care for. In September of 2022 I became GF. Being 26 it was definitely a change to get use to. I made a few loaves of GF bread but was missing good ole' sourdough bread but couldnt find any in store that was GF, so I purchased this packet and figured I would make it myself.
I used Bob's Red Mill Brown Rice Flour and our houses well water (our well is non chlorinated - this is really important, if your water is chlorinated it will kill your sourdough!).
On day two I saw bubbles and rising which was insane. The two photos I attached are at the end of day three after a feed and it has some insane rise and lots of bubbling going on. So far I'm very impressed and excited to be able to use my starter in a few days.
Update: Added 3/19
I made my starter on 2/9, it is now 3/19 and it is going strong. I've made many loaves of bread, banana bread, discard crackers, etc. Very impressed still!

I usually use a sourdough flour starter but have a friend who wasn't able to enjoy it because of a gluten/soy allergy. I tried making my own rice starter but it didn't smell right. I ordered this starter and followed the instructions to activate the starter. By the time I got to step 5, it was so active, I used the discard to make the foccacia pictured. Note: Khorasan (Kamut) is often used in foccacia but has gluten in it so I substituted it with Amaranth, tastes great.
