Oh my gosh!!!!! I LOVE THIS CHEESE!!! They shipped it GREAT with ice pack to reuse. But better than that.....the cheese is AWESOME. I could get great SHARP CHEDDAR IN NO CA IN THE 70S....NOW I HAVE IT AGAIN!!!!! If you are searching for great aged cheddar...I highly recommend. Additionally. This was too crumbly for me. It would not slice cleanly. I tried the one year aged cheese block before ordering this one, and now that this five year block is gone I have ordered another of the one year cheese. First order arrived with a cold pack, and was still cool. My second order had the same cold pack but was hot. Both were shipped on a Monday and arrived on the following Wednesday's.
I only let myself eat this once a week

This is the essence of cheddar. Once I gave a friend a chunk of 15 year cheddar. He let me have some. The only difference from our 5 year here was the salt crystals and the astronomical price. If I let myself have this more than on just Friday, I would balloon. 5 year cheddar like this is sharper than extra extra sharp and is called intensely sharp. It is all crumbly the way it's supposed to be. You can't slice it; just chunk it and sweep the crumblies and chunks onto your plate. I toss on a few Saltines and eat one when I have a chunk or two in my mouth. Thank God that Friday night is cheese night at my place.

My daughter is lactose intolerance and can not eat one of favorite foods - cheese. A doctor told her he might be able to digest 5 year cheese without any digestion issues and he was right. Its so nice to make some of her favorite foods again - cheeseburgers, max & cheese and other reciptes.
