For powdered eggs, this is really good. I use it to make wgg noodles. Mix flour and powdered eggs and a tiny bit of salt and store the mix for when I want to make a small batch of noodles. It also works great for eggnog, since it is pasteurized, I don't worry about salmonella from raw eggs.
