These are about the finest representation of legimes

First time I've had red peas. I grew up eating a variety of peas and figured I'd like these. I was right, they are tasty. They took quite a bit longer to cook than the directions indicated, but I used low heat. They cooked up nicely and retain their shape and have some firmness to them. The liquid thickened up well. I made a hoppin' john type dish, and we really enjoyed it.

I soaked them overnight before cooking. Their website says they will not hydrate and will remain wrinkled after soaking. I found the opposite to be true. I'm sure you could probably cook them without soaking as you can other dried beans, but you'll need to cook them a long time, I would imagine.

Given the firm texture after cooking, I think these will make excellent veggie burger patties, and I plan to purchase more. The flavor is very good.

This rice has converted my rice-averse husband. Its flavor exceeds that of other brands in the supermarket and this brand has a superior flavor to other brands of Carolina Gold"” I think the heavy plastic bag prevents the grains from excessive dehydration. My taste buds and those of DH say thus is more than worth the extra cost. Marsh Hen Mill also offers excellent and extraordinary grits.

Loved the depth of flavor. Topped it with a mediterranean chicken recipe. Also did a pilaf. Yum.

This is excellent rice. Carolina Gold Rice is an heirloom product grown in a particular part of the Carolinas the way to was hundreds of years ago. There's a rich history behind this product from its import origins to the people who grew it to how the seed was preserved and is grown today. This rice has a rich nutty flavor. It hasn't had all the flavor processed out of it the way super market rice has. It's rice with the flavor your ancestors enjoyed.
