They hold the heat to reduce cost of heating the water. They also conform to shape of pan for less evaporating. Especially helpful for items that need to ne submerged for 24 hours or more.

For longer cooking sessions these are an absolute must. They work great and the added bag is nice to keep them in when not in use.

I got a Sous Vide a few months ago and love it! I came across this particular product by chance when I was looking for a clip to hold submerged bags.
Read the review and decided to give it a try.
Works great! The clips are very strong and the balls do keep the water from evaporating - not that a lot evaporates in the cooking process but one does see a small amount of steam.
The only "downside" - more of a hassle than anything - is getting the balls back into the mesh storage bag - there are a lot of them and the bag opening is somewhat small - so you have to be careful, otherwise the balls go bouncing all over the place...
I would definately recommend this product!
