This worked out great for making kimchi. I do wish I had a larger size, you can't fill it fully, or it will blow up with gas. It worked really great for the amount that we made, and I might buy another one.

This is a nice fermenting vessel but wish it came with clearly written instructions as well as a recipe book. Very confusing on the proper way to use it.

Editing my review. The split lid seems to be a feature. I withdraw my earlier review. There is no mention of it in the manual. Perhaps to assist in pressure buildup. As for the pickled peaches, it came out great.

Bought the ,45 gallon one several months ago and loosely followed a recipe from a cheerful Korean lady on the internet. First batch was pretty hot but didn't last long. By time I got to the third batch, i discovered something. The longer it ferments, the mellower it gets. My last batch fermented for 16 days and was perfect for my tastes (I leave it out on the counter, temp 76-78 F) I would have put it in the fridge but my daily samples had consumed it all. Never a sign of spoilage. I just ordered the .9 gallon one, between the two maybe I'll have enough to share
