- •1 cup basmati rice ½ cup yellow mung dal 3 teaspoons Kitchari Spice Mix 2 tablespoons ghee 6 cups water 1-2 cups chopped vegetables (optional) Preparation: Wash rice and mung dal and soak overnight. Drain soak water. In a medium saucepan warm the ghee. Add the Kitchari Spice Mix and sauté for one to two minutes. Add rice and mung beans and sauté for another couple of minutes. Then add 6 cups of water and bring to a boil. Once the kitchari has come to a boil, reduce the heat to medium-low. Cover and cook until it is tender (approx. 30-45 minutes). If you are adding vegetables to your kitchari, add the longer cooking vegetables, such as carrots and beets, halfway through the cooking. Add the vegetables that cook faster, such as leafy greens, near the end. Add more water if needed. Typically, kitchari is the consistency of a vegetable stew as opposed to a broth. This is my first time making Kitchari. I'm not into spicy foods and not a fan of curry. This blend ( does not have curry) is delicious. The first time I made it I used 1/2 cup of the rice and bean mix, 1 tsp of ghee and 1 tsp of the spice mix and 2 cups of water. It was good, consistency like rice. There is not salt in the mix which I prefer to add my ow. If needed- and I did add some salt to my portion. I used the Kitchari recipe on the package the second time I made it with more water and I liked that better, it was more of a porridge consistency. It was delicious! I added fresh spinach and some other grilled veggies I had to the Kitchari 10 minutes before it was finished cooking. I had it 3 nights in a row for dinner. I plan to make this regularly as it is so delicious, easy on the digestive system and healthy.

The fact is, I can burn water. I cannot cook. Period.
I received the spice blend, read the directions which were quite simple, yet did not clarify if the beans and rice were to be pre-cooked before adding. I felt silly calling Banyan, but I did anyway, as I wanted not to ruin the dish. Customer service was outstanding and I actually spoke to a human after 2 direct rings. That is very rare. He walked me through the recipe, giving me his own tips and told me it would likely have a different result each time, but that is okay. I felt empowered and marched into the kitchen with no expectations...it all turned out perfectly. The only downside is that it does need salt. Otherwise it is a bit bland. Salt and pepper to taste is recommended. Add veggies and other spices as you wish. It makes 2 HUGE servings, which lasted 2 people, 3 days! Short story...soak beans overnight and add with uncooked rice, water, seasoning and ghee, bring to boil, cover and reduce to simmer for 40 minutes.
