Finish with a maillard reaction after doing a sous-vide.

No outdoor grilling in the late Fall, all Winter and early Spring where we live in the Pacific North West (lots of wonderful rain).
We've been looking for a better way to finish our sous-vide cooking than just tossing the meat in a regular frying pan.
A regular frying pan will continue the internal cooking process changing our perfect medium rare steak into an almost well done steak, which is very bad.
This grilling pan with lid is the solution.
This griddle pan with glass lid is perfect for just working on the maillard reaction of adding grill marks, a nice color and a wonderful taste to the exterior of the meat and NOT extending the internal cooking of the meat. Our meat looks and tastes fantastic and retains the done-ness we desire, usually medium rare.
We use a light aerosol cooking spray to coat the pan before heating starts. The lid keeps the splatter of this final step off the gas stove top. Takes only a few minutes to create the maillard reaction on each side of the meat. Cleaning is a dream with the non-stick pan coating.

This is such a perfect pan. I totally love the handles. Food doesn't stick and cooks evenly. I used the pan with my charcoal grill. It fits perfectly and is easily moved on the grill.
