These small tart pans are a pleasure to work with. I have used them several times & whatever it was that I made, they came out of the shells perfectly. There was a time when I was in a hurry that I forgot to remove our pizza stone from the oven & not thinking I put them directly onto the stone. After the timer Ⲡwent off, & I looked down at my 🥧 tarts, I realized what I had done & knew that I had burned the bottoms & I was going to have to make them again. Well to my surprise not one of those tart's had a burnt bottom & they all came out 👌perfectly. After that, I ordered another set & I've been using them all for all of my favorite tart's. Hot, Warm & Cold, & every time they come out of the frame, perfectly. No matter the type of crust I made.

These work fantastic for mini quiches, which is why I ordered them. With the removable bottom center, you can pop them out to cool more and once cooled, they slid right off the center piece. I can't wait to make cheesecake and tarts next!

I was looking for mini tart pan to make egg tarts (dim sum dessert). This fit the bill rather well. They are also just the right size for French pastries, in case you are interested in that, too. The removable base makes separation of the tart so easy! And I need not worry about breaking the tart shell accidentally!! Love them.

If you are asking about egg tarts, I find this better (bigger) than the 3in tart pans (which do not have the removable base).
