I cannot afford to use this for a full bread recipe. However, my trick is to use it to feed my Sourdough starter, and just 1/4 cup in my loaves. That, plus some Caraway seeds, enables my Sourdough French bread to bake up aromatic and full of tangy rich flavor! I store it in the fridge to preserve, and it keeps for a long time. Highly recommend!
