Note: Use 4-5 quarts raw agave for 5.5-6.5 gallon batch and make sure you follow the basics. 5.2 acidity (get a meter!!), , keep temp between 75-85 degrees (I found 80-83 degrees works off the best) most importantly use a friggin Turbo Yeast/ Dady yeast + yeast nutrient. Dady yeast for the strong Spirit de Agave Azule. Fermentation starts within the hour.
Under-note: To adjust wash/ wort toward more acidic add lemon juice. To adjust wash/ wort more neutral use very small amounts of baking soda (very little moves it a lot). Remember 5.2 acidity ALWAYS and across all washes/ worts, well, basically.
Also usually no need for bung/ bubbler when using Turbo yeast.
To cool wash/ wort quickly and cheaply, wrap wet towel around stainless/ glass fermenter, blow a fan breeze across wet towel.
Bottom line, IT ABSOLUTELY FERMENTS, WHEN YOU KNOW YOUR CRAFT.
Not for the backwoods schooled, if you can't think on your feet.

At 58 years old with Lupus, I am improving my overall health with a deuterium depletion diet but like my coffee sweetened. I have lost 25 pounds, increased mental function and strength. I drink deuterium depleted water as well. Organic is the first most important thing I look for because anything recently sprayed with glyphosate increases deuterium content. Secondly, Raw is important to me for the minerals calcium, magnesium and potassium. Thirdly, glycemic index is important for the obvious reason that as you get older you start to lean in the direction of diabetes and weight gain. Fourthly. inulin feeds good bacteria and is a type of fiber that most people do not get enough of. I make a homemade probiotic Greek yogurt with organic milk because I believe gut disbiosis is a big cause of bad health of any kind. I tried honey in my coffee and noticed that I did not feel as good as when using Organic raw agave. I gained weight, had more body aches and was more foggy headed. It's also cheaper than honey which may come from bees fed on sprayed fields. I can't recommend Organic Raw Agave enough!
