I hand washed all the pieces prior to using them for the first time. I wiped a light coat of grape seed oil on the trays. In one tray we place chopped red potatoes that had been tossed in olive oil, lemon zest, salt and pepper, then sprinkled shredded parmesean cheese on top. We placed sweet peppers to roast in the second tray. Delicious, trays worked perfectly as intended and were easy to remove from the heat and serve. We didn't experience any smell with first use and didn't find the edges of the tray sharp
