This is the ultimate convenience item. I love sweet potatoes but don't always have time to bake them or want to chop them. We don't microwave so I used the stovetop instructions and it really just took 2 minutes to heat through. I enjoyed some with vegan butter and salt. It was very satisfying and filling. I also put some in a vegan scramble and it's delicious! Definitely recommend, especially as a shelf stable vegan convenience food.

We had this Sweet Potato Rice for dinner tonight as a side dish along with a stir fry and burger patties. It tasted pretty good. We were busy most of today so this was a nice way to get a healthy side dish in a short amount of time. On most days it would probably be cheaper just to microwave or steam and mash a real sweet potato. These packets would be expensive to use on a regular basis, especially for a big family. But for a quick side dish or snack these packets are great to keep around the house.

Tonight I made a protein, frozen riced cauliflower and Fullgreen Sweet Potato Rice. It was a super quick and healthy supper. It doesn't have a lot of flavor and is cooked till it is mushy. I think it tastes fine, but if I had more time a fresh sweet potato would taste better. It does have a bit of rice shape not just puree. So, if you need cooked sweet potatoes in a shelf stable package, this is super convenient.
