I live in the Pacific NW where blackberries run free....lots of blackberries. I had the urge to make jelly last week but did not have a sieve so went shopping on Amazon and bought this sieve and the pestle designed to use with it. I picked a little over a gallon of berries on same day the chinoise/sieve arrived. I cooked them down and poured the berries in the sieve in two batches. Not a single solitary seed was able to slide through this sieve because of the way the sieve is designed. It worked perfectly. The berries were completely crushed and juice free. I simply tapped the sieve over the garbage and proceded to make a batch of jelly and 3 pints of syrup. This sieve works perfectly - buy it, you will be glad you did!

I was given a good non-rusty Chinois with out the the pestle. I'm so happy with this one, it fits perfectly! I smashed the little dent right out of the Chinois with it!

I got this Chinois to filter coffee grounds when I create cold brew coffee, and it works amazingly! I make cold brew from finely ground coffee, so the particles are quite small. I used the Chinois without any other filter just to see how many grounds would go through (expecting a LOT of grounds to go through), and almost everything was caught by the Chinois. I was shocked! I ran the coffee through the Chinois 2 more times, and it caught whatever grounds were left. As a final check, I lined the Chinois with 4 layers of cheesecloth and poured the coffee through one last time. All I got was a smear of coffee particles on the cheesecloth. The Chinois did all of the filtering that was needed, without the cheesecloth! I am thrilled.

I bought this to use with a chinois I picked up at the Goodwill for $2.50. I was taking a chance as the chinois did not come with one. It's a little too pointed for my chinois.
