*The* chocolate for chefs and chocolate lovers. Use this form to melt down for cooking/baking. The 72% a nice balanced dark--not too bitter or too sweet. A bit expensive yes--if not in your budget Nestle's semi sweet morsels a reasonable cheap alternative--but nowhere near the refinement of Valrhona flavor.
