I am not crazy about this flavor. I was hoping for a caramel-type chocolate flavor, but it didn't quite hit that mark. I won't buy this one again, as the flavor is not to my taste.

This has an amazing creamy flavor with just the hint of caramel richness to it. Perfect for desserts or scones. I can't rave about this enough. It takes about 4 pieces to equal one ounce. Easy to chop and incorporate.

I used these to make a milk chocolate and Chestnut Swiss buttercream frosting for a Buche de Noel. I melted about 4 ounces and combined it with 4 oz of pureed chestnuts, a few tablespoons white honey, and a few tablespoons of French Brandy before incorporating into the buttercream. It came out amazing. The slightly caramelized flavor with the milk chocolate and chestnuts was perfect.
I also used this to create Chai spiced truffles that were rolled in toasted coconut. Again, it worked out beautifully and the caramel flavor really enhanced the overall taste experience.
Overall, this is a beautiful and unique chocolate to work with. Additionally, not once have I had any problems with it seizing, which I cannot say for all the chocolate I work with from Valrhona. This stuff is a dream. Will definitely be purchasing it again.

Tasted great for the first 2 weeks...flavor wasnt as good after that.

These are milk chocolate (not dark) with a very interesting and delightful finishing flavor. I liked these a lot more than Jivara, which I felt was less complex. Personal preference, but really liked Caramelia due the flavor profiles.
