Anasazi Beans are the almost unknown bean that have a great taste and you don't have to soak the dry ones prior to cooking. Research and get the history of their discovery and you'll want to try them.

If you haven't tried anasazi beans, they are delicious--more tender than pinto beans and slightly sweet. They turn pink when they are soaked.
They are delicious cooked simply with water and a little spice, or with some added ham. They also make the basis for amazing baked beans. These particular beans are fine except that you should expect to pick them over carefully to remove bad beans and some impediments. Worth the effort.

These beans blow the socks off of Pinto Beans. Great flavor, quicker cooking time than Pintos, and absolutly delicious.
