Great chilies, good flavor

All were even sized, and stems were on. They smelled great and looked good too. As for heat, the hot could have been hotter. I've had enough red chile to know what hot can mean. I will order again and I'll add a bag of extra hot just to allow me to ramp up the heat, as needed.

I see from the questions there are people concerned that these may not be Hatch New Mexico chilis. Let me assure you, they are and they make delicious sauce. From opening the pods once soaked in warm water, I could smell/ feel the heat- it actually made me cough! The way to make authentic sauce is so easy and comes out way better than the powder that you can buy at most grocery stores. You simply mix several tablespoons of olive oil or lard I used olive oil with two heaping spoonfuls of flour and on medium to hot temperature in a skillet make a worm brownish colored paste don't let it get burned then lower it to almost off then mix the chili pods three or four of them in three cups of water with a tablespoon of salt and 3 cloves of garlic in a blender once that's pureed pour that into the pan with the paste made from the flour and the oil or lard and y La you have red chili sauce. you will see little chips of the red in it somewhat like you do in Thai food red chili paste if you don't want that in there you can put it back in the blender and puree it some more to try to get most of it out then put it back in the skillet and leave it on low and it will evaporate and turn into more of a liquid like the Little Skin will pretty much melt down regardless of makes the best tasting chili sauce I am in heaven here and so glad I found these on here and at a bargain price!
