Compared to fresh rhubarb, this looks horrible. However"¦ it's canned; that statement applies to almost all foods.
Having said that, the taste and texture are perfect for pies!
These are packed in "light syrup" (sugar water). Typically I would cut rhubarb stalks into 1" pieces and strawberries into halves or quarters, then toss these with a cup of sugar for each cup of fruit. Fruit, sugar, a little bit of corn starch and some cinnamon finish the filling (as well as some butter on top!)
This year I didn't get any rhubarb to freeze, so I'm going to make the strawberry filling separately and then mix with the rhubarb before putting in the pie, as the rhubarb already has plenty of sugar.
Another great advantage is that the rhubarb is less stringy than fresh - this is usually not an issue once baked, but some stalks are tougher than others. With these canned rhubarb pieces, they're pre-cut and pretty soft already.
I'll update if the pies turn out terrible!
