Even at Asian grocery stores you can't really find organic 100% soba noodles. I am so happy I found King Soba on Amazon! These noodles are pleasantly chewy and absolutely delicious. In Japan, soba water ("Sobayu" - the cloudy water you boiled soba noodles in) is often offered at fine soba places. I can now do that at home! You just add a bit of your soba dipping sauce (dashi, although if I am lazy I just mix water, soy sauce, mirin, and sake and call it dipping sauce) in hot soba water and enjoy at the end of the meal. It is packed with nutrition.

I think these noodles are great. I really like the taste and I have missed soba noodles since I found out I had celiacs so this was a good find for me. you have to make sure any leftovers are stored dry or they get mushy, they will disintegrate in liquid and turn into a gross mess (as I learned with some leftover Pho. Used for a stir fry dish I think they keep relatively well, but I did have a batch I cooked and drained and stuck in the fridge sort of moist, they stuck together, but I just sliced them up and seasoned them and made some buckwheat seitan from them, yum. I think these are great and It's the only 100 buckwheat flour soba I've found. Very nice.

These soba noodles are wonderful! Just fixed them for dinner. Each 8.8 oz pkg has three separate bundles inside. Each bundle being a serving. I cooked the noodles for 6 minutes and they were perfect. They are 100% buckwheat. I would definitely buy these again and recommend them to others

Gluten Free is important to me. These noodles cook up very quickly and can be eaten hot or cold. I like to ice them down as soon as the 6 minutes are up, then mix with julienned vegetables - carrots, peppers, zucchini, scallion and then cover in peanut sauce. Healthy, delicious and filling.

I love soba noodles but I didn't realize that most soba noodles (which traditionally are 100% buckwheat) bought in stores are mixed with regular wheat. Buckwheat is gluten free but when mixed with regular wheat they are not. King Soba was a very reasonably priced 100% buckwheat soba. They taste great and have great texture. If you are looking for real gluten-free soba, then I highly recommend theses.
