It's always a challenge to approach the flavor of fresh seafood. These mussels are very tasty, and would be a nice treat to have on toast points, or, as the Spanish do, over roasted or smashed potatoes.
Other mussels I've had that were from the refrigerated part of the store were far oilier, and less tasty.
This marinade is a combination of olive oil, cider vinegar and spices...it's lighter, and to my mind...it works!
