I bought this during covid when everyone panic bought every non-perishable item in the grocery store, and it was hard to come by any gluten free pastas. I had been using this as a gluten free option due to my wife having celiac. The 10 pound bag seemed excessive, but I was able to divide it up into airtight containers and pack into my pantry. The good thing is they typically have a 12-18 month shelf life, so you only need to make pasta 1-2 times a month to use it up prior to expiration.

I ordered the variety pack but I just tried the white cheddar one tonight. Honestly, I was surprised how well it tasted. I weighed out one serving on my food scale and then weighed the cheese serving (half the bag) and added half the serving of milk (used almond milk) and it tasted just like a less creamy, little bit slimy version of mac & cheese to me! Can't complain one bit considering how much of a better option it is health wise. It solidified my craving as well. I also ate it with shrimp to make it a complete protein. It was overall pretty filling! Can't wait to try the cheddar.

I was reading an article about healthy swaps for comfort foods, and this was recommended as a substitute for traditional mac and cheese.
I used to eat Kraft mac and cheese ALL the time before I started a 3-year fitness journey in 2018 and cut my body weight in half, and I haven't had any at all since I started because I didn't want to get sucked back into unhealthy eating... IT'S FANTASTIC. It's creamy and thick (I added 1 Tbsp butter to the entire box) and delicious. I mixed in some Creole seasoning just like I used to with the old stuff, and I honestly couldn't tell that this is healthy. I'm delighted to have my old comfort food back in my diet in a new, healthy form. HIGHLY recommend.
