Doesn’t make my throat bleed like modern wheat

I have a gluten or wheat sensitivity where after several bites, my throat bleeds. It makes the small blood vessels in my throat break. Took me 18 months to figure out it was gluten. Ten different doctors couldn't figure it out. I took a chance on this wheat after I read how genetically different it is from todays wheat. Wow, no problem! I made bread and ate it for three days straight"¦.no sore throat, no gravelly voice, no broken blood vessels. Expensive, but worth it for the occasional wheat treat.

Order this regularly now. It's a daily part of my diet. Once I figured out how to sprout them it's now very easy breezy. I split one of the individual bags in half putting half in a quart jar the other half in a baggy in the refrigerator. I put the green sprouting lid on top, fill the jar with water, swish & drain then fill again leaving it on the counter overnight. Next day or two I rinse twice a day with clean water, drain & tilt it on it's side in a shallow bowl to drain completely. Once I see those little tiny white tails pop out and they're slightly long, I dump them onto parchment paper, spread thin & dry for about 3 hours. Then I put in a dry quart jar put a white plastic lid on it & refrigerate. They're ready to eat. Yum. So good for you too.

I was looking for something to replace rice because of the arsenic, and this has that same chewy texture I love. However, it's very expensive, especially if you plan to use it as a staple. Probably won't reorder for that reason, unfortunately. Wish you could buy it in bulk at a discount.
