Great home slicer

After having experienced both heavy, high quality industrial slicers and wimpy wobbly ones from JC Penny, I looked for a quality unit for a reasonable price. I am very pleased with this choice. It sliced cooked meat in very thin slices. Didn't get it Procuitto paper thin, but I didn't expect that for the price. Downside is its loud. Also, when pushing meat against the blade, it can kick the thickness wider so clamping it with a C clamp helped steady that. It wasn't that big of a variance anyway. Am happy with how sturdy it is despite being light weight. If something is too cumbersome to access I often skip it. This is not that way. I can store in a cupboard and its light enough to carry across the room easily. I sliced ten pounds of meat and three pounds of onions rather easily. My point in getting this was to save money slicing my own meat, and I should have no problem with this. I am very pleased. I'm glad I made the purchase and would do it again. It's a home use slicer and well worth the money. Someone seeking consistently paper thin slices, this isn't a professional unit. I'm a serious home cook and caterer who invests in quality tools. I am pleased with this purchase.

I put off this purchase for over a year simply because I wanted to thoroughly research before I bought a slicer. This machine had a good price and good reviews. I pulled the trigger and I'm glad I did. I've had a chance to use it three times so far. I usually make beef-on-Weck sandwiches so I use a cheaper cut of meat and cool it before I slice. Zero problems ! Sturdy tray, smooth slider action, sharp blade, adjustable slicing guide capable of slicing thin. The motor doesn't bog down and I put a pretty good amount of pressure on the meat when slicing. Easy to clean, light weight. What's not to like ?

I believe in giving credit where credit is due. I believe in letting people know when a company's' product is not only excellent but their customer service is superior & they stand behind their product.
I do not buy processed deli meats. I slice my own meats, cheeses, bread, vegetables, etc with my Chef's Choice 610 Food Slicer. It's frugal & less sodium avoiding deli meats, etc. I have owned my Chef's Choice food slicer since before my teen son was born. I make three square, healthy meals a day for my husband & son so I use my food slicer regularly. I sharpen the blade on the unit myself with their sharpener to keep it going well. Well, I finally wore out a part inside the unit & was nervous I would need buy a new unit or pay a crazy amount to order the part. I called Edgecraft this morning who owns Chef's Choice: #1 I immediately had a friendly lady answer my call without the whole rotary game to get to a real person, #2 I explained the part which I need & she knew what it was right off the top of head (The hub - plastic piece which the knob that holds the blade on screws into), #3 she took my information to send me out a replacement part FREE of charge *today* to arrive the beginning of next week.

UPDATE: I just used this to slice some homemade bacon today. I was worried that since bacon is kind of squishy that the slicer might just drag the meat into the blade and make a mess, but WOW. This thing goes through bacon like a laser. My bacon slab was about 2-1/2" thick, too, and the machine didn't even sound like it struggled. I wish I could give it more than 5 stars at this point - I'm thrilled with it, and that's rare for me to say!
I've been wanting a slicer for years to make my venison jerky faster more and more uniformly than cutting it by hand with a chef's knife. I really wanted to find a used commercial slicer but even used they're crazy expensive and too big to store.
I recently got into making bacon from scratch, curing raw pork belly and smoking it. That kind of amped up my desire for a slicer, but I really never thought these small "home model" units could cut it, so to speak. When Amazon had this on a Deal of the Day with free returns I figured I didn't have anything to lose and gave it a try.
At first glance, it looks and feel like a toy. It's light and small, but the carriage runs smoothly and the motor and drive train sounded fine. I had a cooked boneless turkey breast from Costco so I threw that on the carriage and gave it a try. Wow... this thing peeled ribbons off that turkey as fast and I could go back and forth. I was really pretty impressed with how well it worked. It will dial down to almost paper-thin slices.
Yep, it's kind of a pain to clean, as is my meat grinder, sausage stuffer, and anything else that contacts raw meat, but I think that's just part of the price of convenience. The biggest drawback in cleaning that I see is that the drive gear for the blade is mounted to the back of the blade and coated in grease, so every time you take the blade off to clean it you have to deal with that. Other wise everything disassembles pretty easily for a soap and hot water cleanup.
I'm generally the type that will pay extra and get the very best, but honestly I think for my needs, this little slicer does a bang-up job. It's small enough to store easily but still gets the job done. I'm looking forward to deer season in a few weeks so I can make some more jerky with it.
