These tart molds work really well. Just press a 3 1/4" dough circle into the mold, form with your thumb and trim off the top with your thumb. Dock the bottom with a fork and bake. The baked shell just pops right out.

I bought these mini tart pans to make pasteis de nata and they worked perfectly. I was skeptical because this listing is significantly cheaper than other mini stainless steel tart pans but I got exactly 50 pans and they were actually stainless steel. They're easy enough to clean with warm soapy water and a sponge and I did not have trouble removing the tarts because my pastries were so buttery. If you are making something less oily, you will have to grease these pans to make sure they do not stick. I will warn that when drying these, make sure they are not stacked on top of each other - a few of my pans developed small rust spots because they were stacked but I scraped them off with a fingernail.
