I actually don't mind that this is made from riper olives than it's counterpart.
In my opinion, it's more buttery, richer and more approachable and excellent for dipping bread into, just like the kind at an Italian restaurant.
The one made from green olives is more bitter and a touch more intense but still very good. Maybe better applied on grilled meats and roasted vegetables after they're done cooking.
I love the opaque squeeze bottle and cap that lets you control the amount of oil administered.
