I am not sure why this flour is better but it makes a huge difference for pizza crust. It's all about the crunch... yum! I read the reviews and was skeptical but it truly makes an awesome pizza crust. I haven't made bread yet but suspect it will be equally amazing. This company also make a pizza flour which is packaged in a blue bag but it is is more for Napoli style pizza which gets cooked at around 900F. From what I read this flour works better for more conventional methods. (I cooked mine in an oven at 550F on a pizza stone. No oil in the dough, just flour, water, salt and yeast.) Just buy it already!

Great product. Some broke open in shipping, as it was packed tightly into box with no protection, but most made it. However all the packs expire within 5 months. I think for flour, when buying in bulk like this, you should be able to do better with expiration dates. This is the best flour for making pasta, but you only need a little, it goes a long way. Most of this will expire before I can use it, and I make fresh pasta often. I'll donate it, and I'm not complaining about the burst packs, but between the poor exp date and losing some to no padding in the shipping box, it's not worth buying this very good flour in this manner.

I have been making pizza at home for more than 8 years, I never thought of buying this flour. I had bought pizza flour someplace else and was not impressed. I was hesitant about the amount of flour in this order but I have to tell you that I have gone through this in record time. My pizza dough is so easy to work with that I find myself making pizza more often than ever. I have used it for pasta and focaccia. I thought it would take me at least a year to use this much flour but after 5 months I only have about 7lbs left. I will be ordering more in a few weeks.

I've been buying Caputo OO flour for pizza dough to use in my wood fired oven. It's so good I don't ever see switching to something else unless it becomes unavailable! It makes such wonderful crust! Also, for those of you who are sensitive to gluten or gluten intolerant, search these reviews and you'll find out what I found out by accident. Many who have issues or intolerance to gluten can eat breads made from this flour without issue. We began using this flour specifically for wood fired pizza. We bought gluten free crusts for our friends and family with gluten sensitivity. Even though we had them, they just couldn't resist a "taste" of the pizza made with Antimo Caputo 00 pizza flour. A taste led to a bite, then to a whole pizza. Now we don't even bother with gluten free crusts. This flour is not bleached, and is GMO free. Wonder if that has anything to do with it?

Bought this after using up 6-kilo bags of another brand of Italian 00 flour no longer listed on Amazon. I am a serious student (not master!) of egg noodle making. Many cooking shows, many clips from YouTube, many recipes later... I have some good basics that work well for me. I thought I had it down to a pretty good science. Then I began to use this flour (1 time only so far), otherwise same recipe as I have used about 10 times now, and I was blown away by the improvement in the dough. So much easier to knead, so much easier to roll out ( I roll by hand), and very nice noodles. At first I was amazed at how much better the dough was, then I remembered!! it was the first time I used Antimo. Could have been a fluke but so far I am impressed. So much better from this 00 flour compared to the other 00 flour. Granted, it's a lot of flour, a heavy package, obviously. But if you are into pasta making and or pizza making, you will use it up! And you won't ever go back to factory made pasta or pizza again, I hope!
