I was gluten-free for 12 years. Spelt has a weaker gluten so some gluten sensitive can tolerate it. I decided to try it and never felt better. I use it to feed my sourdough starter and then as the bread flour as well. It makes great bread that is easy to digest even for sensitive digestive systems like mine. I LOVE bread again!

I use this to make a loaf in my bread machine every. I use the whole wheat bread cycle. It's a 4 hour cycle. I use the half wheat half white recipe. But I use all 3 cups spelt flour. It also calls for 2T butter, 2T powdered milk, 2T honey, 2T unbleached sugar, 1 1/2 tea. salt, 2 tea. fast acting bread yeast. 1 cup plus 1 Tabl. filtered water. Perfect 1.5 pound loaves.

I have really enjoyed this flour. It has an even finer grind than Bob's Redmill brand. It has an awesome flavor and works great for quickbreads, muffins, pancakes and other "batter" type items. I haven't figured out how to make a shaped loaf of bread with it very well yet, but I hold out hope there is a way. The lower gluten has made it easier for me to digest and I think the pros outweigh the cons. I hope they continue to offer it at a competative price for a long time.

Been using this for a couple years now, still love it. Have had excellent success with cookies and cakes after experimenting. Have done awesome chocolate chip cookies. For cakes I tend to use this in addition to einkorn, as I feel einkorn can have a slight bitter taste that accumulates as you eat it, most noticeably in sweeter items. The spelt helps dissipate that taste for me. And einkorn seems to have even weaker gluten strands than spelt, so the spelt gives it more body too.
