My bag came with little black bugs in the flour!

Do not buy this stuff unless you like eating little black bugs! My bag came with the little critters within the flour and I ended up throwing it away! Do not need the extra protein and they do not process returns. Definitely will not buy this again!
Delicious Wheat Bread From The Machine!

Very nice flour to use in the bread machine! I stirred 1/4 cup of honey into 1 1/2 cups of lukewarm water and poured that into the bread pan, and sprinkled on 2 1/4 teaspoons of active dry yeast. As that sat with the yeast beginning to work, I measured out into a bowl 4 1/4 cups of this whole wheat flour, and added 1/2 heaping teaspoon of salt to that. Then, I poured two tablespoons of vegetable oil into the water mixture, and put the whole wheat flour and salt I'd measured out into the bread pan. On the machine, I chose the two pound loaf size, whole wheat setting, and dark crust. This took 3 1/2 hours in the machine. This loaf should be removed and allowed to cool with one edge propped up slightly to allow moisture to escape to avoid sogginess. This bread sliced nicely and made lovely sandwiches with a surprisingly light texture.

I have a sandwich every day at work and make my own fruit and nut loaded whole wheat bread for them. I got stackable dogfood containers and loaded the enire bag in the one I'd just emptied of the last great River Whole Wheat Flour. When I'm done with this one, I'll get another as I'm very pleased with the quality, the price, the result from the oven and the heron on the front of the bag. For the plain whole wheat I add a spoon of vital gluten but for the Whole Wheat Bread Flour I skipped that last week and got a good rise. I got a big bag of GR Seven Grain flour too, Gotta have good bread!

This was my first and only bag of this flour. I won't be getting it again because the results were terrible. The taste was fine, but it was gritty, and would not mix or rise very well when I used it. Normally I don't need to mix white flour with whole wheat for my recipes in order to get them to work, but in this case I had to just to get the loaves to rise properly. While it might be a case of a bad batch, I can't afford to waste money on the hopes of another sub-par product.
All great until the most recent order.

Great River Organic Milling, Organic Whole Wheat Bread Flour, 25-Pound Package This is the third bag that I've ordered from Great River since last year. I've been baking bread using their organic whole wheat bread flour and my wild yeast since last year and it's always given me great-looking (nice rise and texture) and great-tasting breads. However, ever since we started using this bag, the result has been nothing but disappointing. At first, I suspected everything but the flour (I had a lot of faith). I kept on tweaking every detail until it dawned on me that something may be off with the flour because the dough would ferment well but it's lacking the rise as before. And my doubt was confirmed by a few recent comments as well.
Now, I have to figure out what to do with a huge bag of flour that doesn't perform.
Update January 2017 - This is an update from the previous three-star rating. I'm glad that I took a leap of faith and decided to give this brand one more try. I have to say that the recent bag that I purchased is of the best quality out of all 4 bags over the last 2.5 years. The difference is immediately noticed when the dough shows obvious life (I hope you know what I mean if you bake). I've made bread twice so far with 100% of this flour (and wild yeast) and have been extremely satisfied. Good flour gives confidence in knowing how the dough will react to different conditions. If the quality stays this way, I will recommend this product with no reservation.
