Worth buying and freezing ...

i love this flour! even for one or two people, it's worth buying the 25-pound bag, breaking it down, and freezing it. of course, being whole grain, it needs to be kept in the freezer to keep it fresh and wholesome ... especially in florida. the flavor is wonderfully nutty, and it makes great breads and about anything else you can think of ... and spelt breads have a beautiful texture. I especially love the cinnamon rolls and raisin and breakfast breads! even in a pinch, I haven't weakened and bought off-the-shelf bread in over 4 years (perish the thought), and this flour is just what I needed to keep me baking the nutritionally good-for-you, healthier breads without spending an arm and leg. the last time I bought off-the-shelf bread it tasted like cardboard. thank you great river! :)

I have health issues with modern wheat products, so tried this spelt.
I can have soft, fluffy bread, delicious pita, tasty cakes and cookies again with no digestive upset. Few tweaks here and there but mostly a cup for cup in recipes. Have it on auto-ship so I never run out.
Makes great bread - use a banneton and baking stone

Bought the first bag 9/2014 and are re-ordering the next bag. My family and I love the bread this makes - with 50% - 70% spelt, the rest (wheat) bread flour. They may not rise as high as 100% bread flour loaves, but the good spelt taste makes up for this minor drawback. Also we like the pancakes we make - either 100% spelt, or 50% spelt, 50% buckwheat. We purchased some large plastic food storage containers for the flour.

Like the logistics too: it is easier to purchase this large bag than to keep buying the small bags that make only a few good-sized loaves of bread.

I do not write many reviews, BUT this flour produced the best bread that I have ever tasted.

I was not sure that I really wanted 25 pounds of flour, because I have grain moths in my house. No problem. I am sure that I will use it up very quickly. I mixed up dough for several loaves. I baked one, and refrigerated the rest of the dough. Today I baked off two more small loaves. It is nice to have so much flour to play with. The 25 pounds fit nicely into 4 gallon freezer bags, after mixing up the dough for bread.

I HAVE NEVER HAD SUCH WONDERFUL SUCCESS. Next I am going to work with the rye flour that I ordered.

I loosely used the recipe for spelt bread on the Breadtopia website.
Good for yeast breads and more

When I got this flour, I put it into airtight containers and put those into my freezer (except for the one I was actively using, which went into my refrigerator). I use this flour to make hand-made yeast bread, and I get nice loaves from it. It also worked well in my bread machine while I had it. I've tried other spelt flours that make brick-like, dense loaves or seemed super-sticky and messed up the bread machine, so I'm happy to have found such a good source of spelt flour.
