love this flour. perfect pizza dough every time. comes fast and packed so it won't open during shipping. that's all i need. good price and quantity. I don't have room for too many bags of flour to sit around so i like the 2 pack. i use their recipe for pizza dough. 2 cups flour, 1 tsp salt, 3/4 cup water plus 2 tbsp, 1/4 tsp yeast. i cook at 425 degrees for 18 - 25 min depending on size of pizza. (I use SAF active yeast) This makes 2 medium pizzas or one large pizza the size of a cookie sheet. I always cook my pizzas on parchment paper and that makes a great crust on top of a pizza stone or on a cookie sheet doesn't matter. p.s. i make my dough in a bread machine on dough mode and just let my bread maker take it from there.

for anyone who thinks 'flour is flour' and 'what's the big difference between flours"... when it comes to pizza crust which is all I can speak to, there's a big difference. I have made pizza crust out of nearly every flour you can imagine and this one makes the pizza crust taste the best. I'll also add my judgement is based on grading pizza crust to be as close to that of pizzas made in Italy. I'm not talking Papa John's or glorified flat bread pizzas. This now in my pantry at all times.

The flour was very good and produced great pizza dough. I recommend this over any other flour for pizzas. Every other bread I make I use King Arthur flour. Do not King Arthur Italian Style 00 flour for pizza - it has a low protein content. This Caputo 00 flour has a relatively high protein content which is what you need for pizza.
The only negative I have is that the two bags both had small tears in them.

My wife is glutten intolerant. We cannout use flour in the USA but found that flour from Europe causes her no problem. The antimo if good and very convenient to order thru Amazon
