Smooth as any non stick with better baking.
This is not black steel. It is a blue coating.

I purchased this and seasoned it following the instructions on their website. Proceeded to to bake a seed bread in a 350 degree oven. The pan warped at this temperature, but flattened out upon cooling. When I removed the bread from the pan, there was a blue coating all over the bottom. It did come off when I scraped with a knife. The blue had lightened from the pan where the loaf sat. The raisins in the bread ate right through the bluing. What is this stuff coming off onto my food? I don't think this is heat treated at all, but some kind of chemical coating. Called the company a week ago to try and get some answers. Sent them pictures of pan. Said they would get back with me. Still waiting. Will be sending this back.

Just received a call from Matfer. Was told this is a blue coating compound that they put on these sheets. Could not tell me what the coating was. Very disturbing. Will be purchasing the JB Prince Half-Size Black Steel Sheet Pan on Amazon. Called JB Prince and was told this is just plain black steel. It cost less also.
Inconsistent quality from pan to pan. Disappointing.

Starting off with what I like about these pans. They have a great weight to them. They're dense and solid feeling. After proper first time cleaning and seasoning (like a cast iron pan), they're basically non-stick.
What I don't like about them is really disappointing. One of the two pans came with one corner of the pan kind of bent up more than the others. Without breaking out the ball peen hammer, I wasn't going to be able to bend it back in shape so I just left it as is. It doesn't seem to affect the pan's performance. The other pan has rough, almost sharp burred edges. I'll probably end up taking a file to the edge to remove the sharp burr. I've seen other reviews mentioning the sharp edges. I feel like both of these issues are manufacturing / quality assurance issues. The final issue is that the pan with the sharp edges (no weird bent corner) warps at 350 degrees or higher regardless of what I'm cooking on it. Initially I thought it was the bent corner pan that warped. But no, that one I've had up to 450 degrees with no warping.
So, it comes down to these pans being inconsistent in quality. That's really disappointing when you went out of your way to buy some nice, but fussy, French pans.
