This is my perfect cornbread mix.

This is the best cornbread mix I have found. With some mixes the cornbread turns out toooo sweet, others make cornbread that is tooo dense. This Betty Crocker mix makes cornbread that is lighter in texture, but still substantial, and it has just a hint of sweetness. I can't always find it at the grocery store, but Amazon comes to the rescue, yet again.

My wife grew up on a farm in Tennessee where bread meant corn bread and she loves this stuff. Easy to make and cook, we enjoy it about once a week. We always make bread in an iron frying pan, baked in the oven, never muffins.

For some reason, this is hard to find in the grocery stores, so, hooray for Amazon. Best mix out there. I use it for skillet bread, muffins and hush puppies. For the hush puppies, I add 1/4 cup of cornmeal for a stiffer batter. When we don't finish the bread, instead of saving it for another meal, I crumble it up and put it out for the birds. They love it too.

I am puzzled by reviews from others. First thing I noticed, while preparing this, was how little the volume of batter was. I put mine in an 8" square pan. I spread it across the bottom of pan, while wondering how this very thin layer would ever rise enough to generate an actual piece of cornbread. But, nobody in their review mentioned this issue. So I stuck it in the oven.

Final product was 1/8" - 1/4" inch high in the pan. OK, I thought to myself... I will cut two pieces and stack them. The result was less than half the height you would expect it to be.

Then I thought... maybe it will taste really good and makeup for the lousy presentation. All four corners were hard. So I took from the middle. It was not terrible. But based on taste, I would never want to eat it again. It was dry. It was crumbly. It was overall so bad, I am still surprised anyone had anything good to say about it. Certainly anyone who REALLY made it??

The one review I believe, was the one that said Jiffy brand was better. I say: By a mile it is better!
