Made a pineapple upside down corn cake for my gluten free partner. Doubled the recipe sugar but all else as prescribed for the batter. I arranged pineapple slices on the bottom and baked as prescribed. It came out well. It is unique and tasty.

Great product, nice and fluffy. Certified gluten free and my Celiac/Gluten-Detection service dog has cleared it as truly gluten free as well. Downside: it requires buttermilk which we don't usually keep on hand. Upside: extremely versatile. I have made it to the directions for a sweeter cornbread, I also omitted the sugar completely and used it to make cornbread for Thanksgiving/Christmas stuffing. Good mix, I always keep a box in my pantry.

I do not like sweet cornbread. This has no added sugar in the mix...says to add sugar while mixing to bake. I omitted the sugar and was very pleased with the taste and texture. I also added cheese, garlic and jalapeno to the mix and served topped with pinto beans. So good.
