makes the best pie crust ever. I use cream instead of ice water and with gluten free you can need it all you want. turns out better than gluten crust as it won't get tough with over work. But moving the crust to my pie pan this flour worked just as easy as my old gluten crust did with much less effort or fear of over working the dough

1/2 Cup cream
1 cup butter
2 cups Namaste flour (not all GF flours work the same)
then as flour as needed until it forms a dough ball
Make crusts or chill and make a crust
Sub for WHEAT FLOUR ONLY

Used this flour to make a lemon loaf that just called for "flour", and it turned out extremely heavy and gummy. I couldn't even eat it and threw it away.. I guess unless the recipe calls for wheat flour specifically, don't use this as a substitute.... And I was SO looking forward to that bread :(

Previously, I gave a 2-star review but I'd like to increase. In frying chicken, it's very good. I. Will give it another try on baking. Could have been the milk I used or something.

I'm stoll experimenting with ratios of this flour in recipes. I use this flour at work and all of our baked goods are amazing, however I tried making waffles by substituting 1:1 with the recipe and they were super gummy. I will keep trying! I do like this flour because no one would know its GF, the consistency is like regar flour when in the right proprotions in recipes!
