I have a small collection of decent knives that I've built up over the years but I'm most definitely not the type of person to buy extremely expensive kitchen knives. In fact, I'd probably be hard pressed to pick a very high-quality knife from a cheaper model. The nicest knives in my kitchen are probably my KitchenAid 3 Piece Classic Forged Series Starter Triple Rivet Cutlery Set and that's the set that I'll compare this knife too.

A Cut Above's 8-inch Chef's Knife has been in my home for about a month and I've used it for a variety of cutting tasks in my kitchen. I've used this knife to trim and cube chicken breast, trim and cut sirloin and tenderloin steaks, and for prepping various cuts of meats I used in a paella recipe too. I've cut tons of veggies with this knife ranging from broccoli to onions, and asparagus to Brussels sprouts. All in all, I'd place the Cut Above Chef's Knife right along with my Kitchenaid chef's knife in terms of performance, quality, and ease of use.

I'm a proponent of buying the right tool for the job and skill class. I'm definitely not Gordon Ramsey and I'm definitely not making Michelin star worthy meals. So for my prepping and cooking needs, this chef's knife feels appropriate to my skills. If you're accustomed to more expensive and exotic knives or just spend a lot of time cooking and looking for highest quality this is probably not the best choice in knife.

Everyone needs a good general purpose knife for the kitchen. I like the feel of this one. The handle fits my hand well. The knife is obviously sharp out of the box, cutting through meats and veggies easily. We'll have to see how well it holds up long term. Weight feels just about right, not too heavy but enough to get through the hard stuff and even the more delicate peeling tasks, too. It would benefit from being in a knife block or sheath, not included.

I used to not know what a full tang was but then I started watching the Forged in Fire TV show. While this knife isn't forged steel, for stainless steel, it does a really good job. You won't be disappointed.

I heard about this knife from the youtube channel The Vegan Zombie. I'm not really a knives person. I have a really crappy collection of knives that are probably too dull, but I'm too lazy to sharpen them. Anyway, I was in desperate need of a good, sharp knife. However, I've got a budget. I've had this for maybe a month now and it's my go-to for chopping. I love this knife. It's sharp and it cuts everything I've used it for. Treat yourself.

I bought this not really knowing much about chef's knives. I got it and showed it to a friend of mine that has worked in professional kitchens and he was impressed with the knives composition immediately, saying it felt like a $100 or more knife. I told him what I paid for it and he about fell over. After using it for the past few weeks, I have to say, it's sharp, it feels good in the hand and it does what its supposed to do. I would highly recommend this knife to anyone looking for a solid performing knife at a reasonable price.

I really really really truly wanted to love this knife... I experienced a a problem with Amazon not handling a shipping screw up by USPS and Westside Marketplace went far and beyond what I expected to help resolve the problem. Amazon finally issued credit for the lost package, I reordered this knife and after about three weeks from the date of the 1st order, it finally arrived. It didn't feel right when I first used it but, I figured i just needed to get accustomed to it. The more I used it, the less I liked it...to me it felt heavy, clunky, and awkward to use. In less than two weeks I ordered another Chefs knife from Amazon that was 40% less in price, is lighter in weight, and feels like an extension of my hand which I am very happy with. Sadly, this knife from "A Cut Above Cutlery" now is buried at the bottom of my utensil draw and will most likely be donated to the Salvation Army.
I really, really, really, truly wanted to love this knife.
