Great knife for a busy kitchen!

I recently started working in a kitchen where the general population of workers do not treat the provided knives with any respect at all, leaving the tips broken and edges uneven, usually incredibly dull. After spending about $40 on my own knife that was the same brand as the ones provided, but a step up. (Regular Dexter-Russell white handle vs I-Cut Pro 30404) It came sharp, but after the first 6 hour prep shift I noticed how quickly the blade was dulling, despite hand washing and honing between each cut. I've clocked in around 30 hours of prep so far with my very pretty new Dalstrong Shogun chef and paring knives, and the same heavy use, cautious treatment and careful storage (in the beautiful sheath and box provided mind you) has kept the knife looking brand-new and seemingly sharper than when I took it out of the box, despite honing before first use. I love this knife, my managers and coworkers love this knife too but I don't plan on letting anyone use it. Cutting vegetables with this knife is more satisfying than peeling the plastic off a new phone screen, every time. My favourite feature is the bolster that is designed to encourage pinch grip, which as opposed to most western style knives where achieving a proper pinch grip is difficult or uncomfortable. I hope to have this knife for a long time and I'm definitely going to master sharpening with a whetstone properly using that Dexter brand knife before I even attempt to sharpen this one, but I'm confident the edge will hold until then.

I'm a professional cook who bought this after liking the 10" Gladiator chef knife so much for work. The gladiator really is a beast and perfect for my needs there. The shogun series blade is still fantastic but it's not ever going to work with me. The profile is a little low for my bigger hands so I couldn't see myself using it all day. Also, primarily dealing with meats, often bone-in, I'd be afraid of chipping the more brittle blade when in a rush. Maybe if I were in a kitchen where I were expected to do slower, more delecate work, but as it is, the shogun blade is my current favorite home knife. With proper care I don't see myself needing to sharpen this thing any time soon.

So... I've been dying to get a hand on a high quality VG-10 kitchen blade for a while. When this blade came up on SALE during AMAZON DAY, I had to purchase it!!
So, I'm not a professional chef nor work in food/restaurant industry. I'm just an average Joe who is very enthusiastic about cooking and such.... LoL
The blade is super sharp and beautifully crafted. I love the water mark ripple that you would typically see on some high-end Japanese Damascus blades. And sharpness can be vouched.... my left finger definitely know how sharp it is......(it was slight brushing with the blade while it was on a cutting board.... but it managed to give me crazy cut). Going back to the main point, it cuts through vegis and meats like a hot butter with no resistance. It really let the skill of the blade user shine.
I will check back later to update the blade sharpness after few months of using... see if it stands up to day to day regular kitchen use.

I have to say this company stands by their product. This knife isn't for me but it is made well. After my original review, Nancy from Dalstrong contacted me and set me up with a different knife from their collection. It is nice to see a company stand by their product and not have to worry about being stuck with a knife that isn't quite right for you. Thank you Nancy and Dalstrong.
Overall nice packaging, blade has a nice rigidity, and it looks pretty. There is one major glaring issue with this knife and that is the width of the blade. Not the thickness mind you but the distance from the spine to the cutting edge is just under 1 and 3/4th inches. It makes it look more like a slicer then gyuto. Not only that but the heel doesn't come straight down so there is very little knuckle clearance. With minimal material there, the life span of the knife will not be nearly as long and it just not as comfortable to use. My knuckles scrape the cutting board when I have to dice something like a tomatoes or cut large items like watermelon or squash. I will say the handle is comfortable and feels nice. In all I wouldn't have bought this knife if I could have tried it first I might have gone for one of Dalstrong's other knives because it does feel well made just not well thought out. Also that stamped logo just collects food debris and the texture they went with holds it in. I will include a pic of the Dalstrong over my other knife to show the heel difference and keep in mind the spines of the knives are lined up.

I like to say this a a GREAT knife! I'm a knife fanatic when it comes to good knives, really all I ever want is just a couple really good knives, and after testing and searching around, I have found one that I can call my go to knife. It's durable, sharp, the length size is perfect so doing any cuts (es: slicing, dicing, mincing, chopping) and as a bonus it looks really sleek and looks awesome with the lion emblem on it. I wouldn't recommend using this knife for chopping through bones as I feel you should get a heavier duty knife, but I love this knife for it's use, the price, and the fact that it comes with a nice knife sheath to put it in.
I was afraid the knife was going to be sub-par and over-hyped as I saw it posted quite a lot, but I highly recommend purchasing this knife and the makers seems to provide good warranty as a way to be confident and proud on their work. Great job Dalstrong!
