I bought two of these wanting to try making Jun after successfully making batches of Kombucha. Kombucha scobys were from the same supplier and worked great. When I received the box of two. Both packages were ready to burst. I assumed that they had just produced too much CO2. For the sweet tea, I used organic green tea and honey per the directions. Temperature was 75 deg F and pH was 3.6. After a week the scobys had not grown and the tea was getting cloudy. (I expected much shorter time since the information I read on Jun said it was faster). I finally dumped it this weekend and threw the scobys away. My Kombucha batches are still going strong. I used all the same sanitary procedures I did for Kombucha, but these Jun scobys never took off. Amazon says I have to return them to get a refund - Not sure how I would have done that. Anyway I am pretty disappointed since these are pretty expensive as was the raw organic honey I had to pitch.

I have been making Kombucha for a few years now. My house is a scoby nursery because they reproduce so fast and I can't kill them. I wanted to try Jun and as soon as the Scoby arrived I made my first batch.
I was expecting the same experience as Kombucha but it works a little differently. First of all, the scoby made a thin little film on top. No 1" baby scoby after 7 days! I was worried so I took a taste and WOW!!!!!! I second fermented 3 ways. Grapefruit, lemon lime, and mandarin orange. The second ferment was slower than my Kombucha normally works but it got there, and it was worth the wait!!! The Jun was gone so fast that I've had to ramp up my production to a 2 1/2 gallon brewer and the scoby is brewing strong! I may need to find a home for a herd of Kombucha scobys as I switch to Jun!

From Kombucha to Jun....there is a learning curve

Solid, strong scoby that has yielded many amazing batches. Even when I let a brew go too long, souring the taste and causing me to have to dump a couple batches from user error, this scoby maintained strength.
BREWING NOTES: For the best taste, allow 3 days to brew / 3 days in bottle. This will give you amazing results. If you currently make Kombucha, be aware that this is more of a commitment since you are now having to start a new batch every 3 days. Took me a while and a few failed batches to get used to it all. Also, Stasch makes amazing Green Tea for a great price. For Raw Honey, I have found the farmers market tends to have the best prices. I am a huge fan of Costco but I found their Raw Honey selection didn't taste quite right for some reason. Where the bees collect pollen from will vastly change the taste of your Jun. And finally, my favorite part about Jun vs. Kombucha is that I don't need to flavor it for a batch to taste great. It's perfect right from the start. Even my wife who is very particular about what kombucha she likes has told me many times that Jun is the best tasting drink she has ever had.
