As mixes go, I don't think there are any better

The best pancakes I've ever had are the ones I make from scratch.
The next best pancakes I've ever had are the ones I make with this mix.
Pancakes are a weird beast. I don't think "light and fluffy" is a good way to describe optimal pancakes because with "light and fluffy" also comes the need for a gallon of syrup to wash it down. Light and fluffy turns into soggy and unappetizing.
So when I make pancakes, I try to make something that actually repels the syrup a little bit. A more chewy texture is preferable, and I can accomplish that with this mix.
Now let me be frank and say that your texture will improve if you add oil and egg to the mix. That's just the nature of the game. But the "just add water" version turns out better-than-average pancakes on their own right.
I do intentionally overmix the batter a bit to develop the gluten, but then I let the batter rest in the refrigerator overnight. Activate the gluten. Then let it relax a bit. The result is a complex texture that absorbs just enough syrup to give it the pancake a good flavor without making it too heavy.

I am a breakfast person who could eat pancakes for breakfast, lunch or dinner. I prefer to make pancakes from scratch but often don't have the time. Krusteaz is definitely the best complete pancake mix I have ever had. Complete meaning you just add water, mix and make. Other brands require adding eggs, oil or milk. I like to make three cups of the mix and store to make pancakes fast and easy each morning.

Love the pancakes and waffles this makes! I normally buy the large bags at wholesale clubs, but for some reason this box asked to add an egg for waffles, whereas the other ones just ask for water and oil? Same brand, everything else seems the same, just different recipe for waffles, which is our main usage. Even ordered a small bag here and it had the normal recipe.
