I use this to make pasta dough and for pizza dough. It worked great for both. With the pasta dough you have to use a bit extra egg in the mix compared to the usual pasta dough recipes.

Being on a Keto diet is very costly, and this flour is no exception. It makes a very nice bread that's close to the real thing, but stay clear if you're trying to make noodles. Recipes for noodles with eggs creates a dough with a rubbery consistency that's not very palatable.

Yeah we get it, it's way more expensive then even my little bags of Caputo 00 flour.. that's the price you pay for a nutritional powerhouse from the best US manufacturer of flour.

I decided to buy it and try it on sale. Took 40g and mixed with 40g warm water, 0.5tsp dry Caputo yeast and a dash of honey. Made a poolish, and in the fridge after a rest for about 18 hours. Next day I added 50g flour and 25g water and 3g salt, kneaded it with KitchenAid then hand total 5 minutes, proofed for 2 hours.. voila. 600°F carbon steel pan on the grill. Stretched it out placed it on the skillet 90 seconds, flipped and added topics on the side of the grill. Used Applegate uncured turkey pepperoni and reduced fat mozzarella. 700 cal pizza with 90g protein! I just bought another bag. Will use it for focaccia probably, and pancakes.
Heavy and did not produce a tasty bread!

I substituted 1:1 for all-purpose flour to bake hamburger buns with my air fryer. The dough rose nicely and baked beautifully. The texture is dense, and the taste is somewhat soy flour mixed with vital wheat gluten flour. I don't mind if it tastes like soy flour bread, but I think some people don't appreciate the taste. Overall, it is easy to replace with all-purpose flour and, most importantly, low-carb! I'm happy with the purchase.
