My wife says they are the best pans she has ever had in her life

My wife was getting tired of having nonstick pans either starting to stick, or the nonstick surface peeling off overtime or getting scratched. I decided to buy one of these for her as a gift because she was unwilling to spend the money herself. They are a little pricey. But every time my wife cooks with them she says something about how wonderful they are. I have never heard her talk that way about cookware in the past. She has been so happy with this one that I bought the pan in two different sizes to go with it. So far they remain absolutely nonstick. The transfer heat wonderfully across the entire surface of the pan. They seem to do as good a job of searing as cast-iron at have to weight. The handle stays cool on top of the stove and the entire pan is oven safe up to 500°. The only thing about this pan that is a little bit of pudding is the price but, I have to say, listening to my wife praise these things every time she makes a meal makes the price seem well worth it. You can also use metal utensils in it. There doesn't seem to be any way to damage these pans. That said, they might last forever in which case they'll turn out to be cheaper than inferior pans you have to replace.

We've had a LOT of pans, many non-stick that either peel or lose their non-stick-ativeness. This pan is remarkable. As so many have said, cook at a lower temperature than previous pans - this one is hot and consistent across the whole pan. Some complained about eggs sticking, we've had no issues. We can use metal utensils with zero concern to the surface. I LOVE being able to run it through the dishwasher!

There is nothing I'd change about this pan. It's perfect, we love it.

I love this pan. It is like a dream come true. We had trouble with other pans getting scratched. This pan is great for cooking, the family won't use the wrong utensils and scratch it, and it is so easy to clean. It can even go into the dishwasher. Wish I could afford more.

This is an expensive pan! Let's get that out of the way up front. I justified my purchase because a 12" pan is one of my go-to weapons in the kitchen arsenal and I use one twice daily on average. Add to that the number of pans I've gone through that have warped or don't do what this pan does half as well, and you'll end up with an idea of why I made the bonkers decision to give this one a try.

One big caveat to this review is that as of writing I've only been using the pan for a month and a half. While I'm loving it so far, only time will tell whether or not its worth the price I paid.

When the pan arrived I gave it a good scrub and seasoned it per the included directions. The first thing I cooked was over-easy eggs with a dash of grapeseed oil and the whites were simply gliding around the surface of the pan. Is there a worse offender of pan stickiness than the egg? We're big on fried eggs and I end up cooking them several times per week. They don't always glide but they're always easy to separate from the cooking surface.

We also cook a lot of whole or cubed chicken breasts and the pan has been excellent for giving me the slightly crispy sear that I aim for. This also leaves the pan looking like it will be an absolute pain to clean but it never is. Sometimes all it takes is a wiping the surface with a wet paper towel, and when I do have to break out a scrub brush its a 10 second job, tops. Its worth noting that I baby this pan and re-season it frequently, especially on those occasions it needs a good scrub, so your mileage may vary if your habits differ.

I've also used it to blister peppers, caramelize onions, sauté veggies and make pancakes. So far so good on all fronts. I do enjoy a good steak but only about once per year. I haven't tried a steak in this pan yet but I'm looking for seeing what it can do.

I'm cooking on an electric range with a glass top, so any warp that a pan develops is immediately noticeable and has a big impact on maintaining an even temp across the surface. I won't do anything silly like overheating the pan or rapidly changing temps by cooling it with water right off a hot surface, so I'm hoping this pan can will maintain its shape better than most of the other pans I've used. Again, time will tell and I will update this review accordingly.

Ok. Back story.... I'm a big Gordon Ramsey fan. Not going to lie. My dad, a chef, even got to meet him before his passing. Said he wasn't as big of an ass in person as he is on TV. Anyways.... I ordered a 8" and 10" and both had this black "grease" that would not come off. Even after three washings, the third being in a dishwasher. Hexclad rep said it was a "food safe conditioning lubricant" or something, but sorry... I'm not going to cook food on any kind of black grease from China.

Fast forward, they give me a full refund. Ok. Nice. And I see MOST people are happy with Hexclad, so I give them another shot. Glad I did.

The new pan had the black residue, but it came off with one cleaning. I seasoned the pan as per instructions, which is quite cathartic I might add, and the pan was beautiful and a pleasure to use, and clean, for multiple times after.

So I'll chalk up the incident of the original purchase as an isolated incident and will applaud the Hexclad customer support team for believing enough in their product to realize that sometimes things aren't perfect, and the best thing to do is say we're sorry this happened, this won't happen again and please give us another try.

As someone that has to source goods from China in their own professional life, I realize that the lack of supply chain and antiquated production facilities forces us to have to source from overseas and sometimes outgoing quality control fails us. But the best thing we can do is pick up the ball and just keep running and not look back.
