The trick is to absolutely heat the skillet or baking pan, so that when you put the mixture into the cooking pan, it sears immediately. That gives a nice crunchy crust. Otherwise it sticks and you just get a cake of sorts. The spice is subtle but definitely there. Good savory flavor.
