This is an excellent gluten free pancake mix. It's as good as my favorite gluten mix. My husband loves it and would not touch it if it weren' excellent. We love to put defrosted berries on the pancake before we flip it over. The flavor is so good that you really don't have to use a pancake syrup. The
only shortcoming is it is not organic. The company monitors for allergens.
Update:6/18/19
This still is a great pancake mix. I returned my last shipment, however, because there was no expiration date from this Amazon seller on the
box. Strangely there were stickers over the bar codes that would not peel off and I suspect contained the expiration date hidden by the stickers. I am notifying the Manufacturing
company. Do not use a product without the expiration date.
Update: sept 2019: actually called company which I believe is in Canada and the true expiration date was embossed on the box but not very noticeable.
So all is well. My only objections remain as it is not organic and has some added sugar, not stevia. I'm trying out other possibilities. The problem with gluten free products are they often contain cornstarch and rice flours etc. but I have to say if this is your only once every two week splurge that these are incredibly good and as far as flavor profile and texture and looks, they are phenomenal.
2020! Update
The company has added pea protein to their product and has paid even more attention to assuring its customers that there are no allergens.
New look to box.
Pro: excellent taste as before they made changes.
Has pea protein in ingredient list.
Tip: separate yolk from whites and whip up whites till stiff. Fold in mix. Makes all pancakes fluffier. Other trick is to use seltzer water in place of regular water to make them fluffier.
Con: added sugar to product and natural flavor on ingredient label.
No sugar syrup: buy Lakanto maple syrup. It's very thin but I tried thickening it with tapioca flour( just a teaspoon) and it worked. Just be careful to take off the heat after it starts thickening so it will not begin sticking to pan. You can also add a small amount of maple syrup for extra flavor but there's a lot of sugar in maple syrup.
This is my fav gluten free mix which I like better than oat pancake!
