We've had to eat gluten free for the past 12+ years. We've been making pancakes, crepes, waffles, and banana bread with Pam's for most of that time. We've never found a blend or recipe we like more for pancakes. We do tend to add another flour blend (bob's red mill gf 1:1 blend) when making waffles though.
It has this mild, nutty flavor that is perfect for breakfast foods... you can get fluffier pancakes by mixing it with another flour blend or just adding an extra egg. We usually make a batch and a half but use 2 whole eggs. The leftover pancakes also keep well in the fridge and are nice re-heated if you like eating leftovers. (We do.)
We've experimented a lot with this over the years... you can use egg replacer, sub applesauce for eggs, etc. and it will work. It doesn't work so well with applesauce as the egg replacement when you make waffles though. They stick horribly. (Lesson learned.)
I hate being without this mix. It's been hard to find during COVID times. But that's because it's a great product. Most of our non GF families/friends that have tried this want to switch to it for their pancake mix - but don't because of the price. Lol. It is what it is. People who have to eat GF know that our food budgets are probably a lot larger than families who don't eat GF. Keep hoping that will change.

I can eat wheat but there's too much of it in Western diets, so the fact that everyone I know loves the flavor of this non-wheat pancake mix is a major plus. Yes, more expensive, but hey, it's your body and life. Delicious and healthy.

Pamela's gluten free products are good & healthier than many though a bit pricy here. I've bought this baking and pancake mix before. Pancakes are definitely delicious with the almond meal as is the suggested banana bread recipe which my family loves.
